Introduction: Today, I chose to share a recipe for a goddamn Shrimp and Spinach Salad because apparently some people think salads are just for fucking rabbits. Well, not in my world. This dish is packed with flavor and will make you wonder why the hell you ever doubted the power of a well-made salad.
Listen up, you amateur chefs and pretentious food bloggers, I'm sick and tired of your bullshit about salads being boring. Salads are not just a side dish or a sad excuse for a meal. They can be hearty, satisfying, and fucking delicious if you know what you're doing. Stop with the bland iceberg lettuce and flavorless dressing and step up your salad game, you culinary cowards!
- 1 pound of fresh shrimp, peeled and deveined (and for the love of all that is holy, make sure they are fucking fresh!)
- 6 cups of fresh spinach leaves (none of that wimpy baby spinach crap)
- 1 red onion, thinly sliced (because why the hell not add some bite)
- 1 cup of cherry tomatoes, halved (get the ripest, juiciest ones you can find)
- 1/2 cup of crumbled feta cheese (because everything is better with fucking cheese)
- 1/4 cup of extra virgin olive oil (don't you dare use that cheap ass shit)
- 2 tablespoons of balsamic vinegar (the real deal, not some watered-down nonsense)
- Salt and pepper to taste (season that shit like you mean it)
- Start by heating a skillet over medium-high heat and cooking the shrimp until they are pink and cooked through, about 2-3 minutes per side. Set aside.
- In a large bowl, toss together the spinach, red onion, cherry tomatoes, and feta cheese.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss until everything is well coated.
- Divide the salad onto plates and top each serving with the cooked shrimp.
- Serve this motherfucking masterpiece immediately and bask in the glory of a salad that actually tastes good.
