Garlic Herb Roasted Chicken Thighs

The struggle is real, my friends.

Ingredients:

  • 6 bone-in, skin-on chicken thighs (because boneless, skinless is for amateurs)
  • 6 cloves of garlic, minced (if you use pre-minced garlic, I will find you)
  • 2 tablespoons of olive oil (get the good shit, none of that vegetable oil crap)
  • 1 tablespoon of fresh rosemary, chopped (dried rosemary is a sad excuse for a spice)
  • 1 tablespoon of fresh thyme leaves (none of that powdered thyme nonsense)
  • Salt and pepper, to taste (don't be stingy, season that chicken like you mean it)

Recipe:

1. Preheat your fucking oven to 400°F (200°C) because we're about to make magic happen.

2. In a bowl, mix together the minced garlic, olive oil, rosemary, thyme, salt, and pepper. Let those flavors get to know each other while you prepare the chicken.

3. Pat your chicken thighs dry with a goddamn paper towel. We want that skin to crisp up like it owes you money.

4. Rub the herb-garlic mixture all over the chicken thighs, making sure to get under the skin because flavor waits for no one.

5. Place the chicken thighs on a baking sheet, skin-side up, and roast them in the preheated oven for about 35-40 minutes. You want that skin to be crispy and golden, like a fucking treasure.

6. Once the chicken is cooked through and the skin is crispier than your ex's attitude, pull it out of the oven and let it rest for a few minutes. This step is crucial, so don't fuck it up.
